  Zucchini Muffins

Preheat oven to 350 degrees F. Prepare muffin tins by spraying with cooking oil. Note that this recipe will make 22-24 small muffins or 12 to 15 large or medium muffins.

Sift together into mixing bowl: 3 cups spelt flour
6 T maple sugar
1 ½ t cinnamon
1 t ginger
½ t nutmeg
1 T stevia
1 t baking powder
2 t baking soda
½ to 1 t sea salt

In separate bowl first stir together the following liquid ingredients and then lightly and quickly combine with sifted ingredients: 3 eggs
6 T rice bran oil
¾ cup kefir or yogurt
2 t vanilla

Finally, stir in 3 cups raw grated zucchini (with any excess liquid drained off)

Spoon into muffin tins and bake for 25 to 35 minutes, depending upon the size of muffins.
