- 1/4 cup olive oil
- 3 cloves garlic, pressed
- 1 green pepper diced
- 1 onion chopped
- 6 cups sliced zucchini
- (Optionally, chopped parsley and other fresh herbs may be added according to taste.)
Saute the above in oil. Drain off excess moisture. (Save for soup.) Mix together with the following:
- 1/4 cup additional olive oil
- 1 cup dry bread crumbs
- 1/2 cup shredded parmesan cheese
- 1 teaspoon salt
- 3/4 teaspoon pepper
- 1 teaspoon oregano
- 5 eggs, beaten
- 3/4 cup cheddar cheese, grated
Pour into a baking dish and bake in a 325 to 350 degree. Test with a wooden toothpick after 45 minutes and until done and lightly browned.
