  Zucchini Frittata

  • 1/4 cup olive oil
  • 3 cloves garlic, pressed
  • 1 green pepper diced
  • 1 onion chopped
  • 6 cups sliced zucchini
  • (Optionally, chopped parsley and other fresh herbs may be added according to taste.)

Saute the above in oil. Drain off excess moisture. (Save for soup.) Mix together with the following:

  • 1/4 cup additional olive oil
  • 1 cup dry bread crumbs
  • 1/2 cup shredded parmesan cheese
  • 1 teaspoon salt
  • 3/4 teaspoon pepper
  • 1 teaspoon oregano
  • 5 eggs, beaten
  • 3/4 cup cheddar cheese, grated

Pour into a baking dish and bake in a 325 to 350 degree. Test with a wooden toothpick after 45 minutes and until done and lightly browned.
