  Spinach pastry

10-ounce package frozen chopped spinach, thawed and squeezed dry
Various chopped mushrooms, 2 cups?
1 chopped onion
1/2 cup olive oil ?
3-4 cloves garlic
1 pound crumbled Feta cheese
Lemon juice
Pine nuts

2 eggs
Salt and pepper to taste
1/2 cup butter, melted

Athens Fillo Dough, thawed

  1. Allow fillo dough to thaw in refrigerator overnight. Bring to room temperature before using.
  2. Carefully unroll fillo sheets onto a smooth, dry surface.
  3. Sautee onions, garlic. Later add mushrooms, add spinach, nuts, lemon juice.
  4. Add feta cheese crumbles to the sauteed mix
  5. Let this mix cool down....
  6. Puts 4-5 sheets of fillo dough on a tray
  7. Add the sauteed spinach mix
  8. Puts more sheets of fillo dough
  9. Use knife to cut the fillo dough into squares
  10. Melt the butter. Add eggs. Let it cool...
  11. Brush the outside of fillo dough with the butter/egg mixture

Bake in preheated 350ºF oven for 25 minutes or until golden brown. Serve hot.
