10-ounce package frozen chopped spinach, thawed and squeezed dry
Various chopped mushrooms, 2 cups?
1 chopped onion
1/2 cup olive oil ?
3-4 cloves garlic
1 pound crumbled Feta cheese
Lemon juice
Pine nuts
2 eggs
Salt and pepper to taste
1/2 cup butter, melted
Athens Fillo Dough, thawed
- Allow fillo dough to thaw in refrigerator overnight. Bring to room temperature before using.
- Carefully unroll fillo sheets onto a smooth, dry surface.
- Sautee onions, garlic. Later add mushrooms, add spinach, nuts, lemon juice.
- Add feta cheese crumbles to the sauteed mix
- Let this mix cool down....
- Puts 4-5 sheets of fillo dough on a tray
- Add the sauteed spinach mix
- Puts more sheets of fillo dough
- Use knife to cut the fillo dough into squares
- Melt the butter. Add eggs. Let it cool...
- Brush the outside of fillo dough with the butter/egg mixture
Bake in preheated 350ºF oven for 25 minutes or until golden brown. Serve hot.
