Rosetta's Biscuits
Rosetta was grandma's maid in Kansas City when mom was in 4th grade...stayed until they left for Chicago
(Buttermilk Biscuits with cream of tartar)

sift flour (bread flour or all-purpose)
measure 2 cups

add
1 tsp salt
1 tsp soda
2 tsp cream of tartar

work in 3 tbsp of shortening with two knives or a dough blender.
Toss in 1 cup of buttermilk lightly.

Turn out on lightly floured board and knead slightly, about 20 seconds. Pat into sheet about ¾ inch thick. Cut with floured biscuit cutter and place them right side up on a greased baking sheet. Brush with beaten egg yolk, diluted with 1 tbsp milk (optional). Bake in a 450? oven for 8 to 10 minutes.
